Let’s make the good stuff that goes in that flaky pie crust! I’ve provided a link in the top of each document to an easily printable version of the recipe in this blog as well.

Ingredients:
3 bananas
3/4 cup sugar
1/3 cup flour
1/4 teaspoon salt
3 egg yolks (save the whites!!)
2 tablespoons butter
1 teaspoon vanilla
1 9 inch baked pie shell
Directions:
Preheat oven to 350

Preheat oven 350F
Slice 3 bananas into the bottom of the pie shell
In saucepan combine sugar, flour and salt.
Gradually stir in milk
Cook and stir over medium heat until bubbling
Continue to cook and stir for 2 minutes then remove from heat, but leave the stove on

Put some of the liquid into your slightly beaten egg yolks to temper then add to the pudding mixture
Place back on the stove and stir constantly for 2 minutes then remove from heat
Ad butter and vanilla extract
Pour into the pie shell
Top with meringue (next blog!)

2 ounces unsweetened chocolate (I use ghiradelli)
⅓ cup flour
¼ teaspoon salt
2 cups milk
3 slightly beaten egg yolks (save the whites!)
2 tablespoons butter
1 teaspoon vanilla

Gradually stir in milk
Cook and stir over medium heat until bubbling
Continue to cook and stir for 2 minutes then remove from heat, but leave the stove on

I’ve always been told to use the recipe off the back of Nellie’s & Joe’s Key Lime Juice and it really is the best I’ve ever had so here it is. Be sure to double this recipe if you are using a deep dish pie pan also.
Ingredients:
14 oz can of sweetened condensed milk
3 egg yolks (save your whites for meringue!)
1/2 cup key lime juice
Directions:
Preheat oven to 350F
Combine all ingredients until smooth.
Pour into pie shell and bake at 350 for 15 minutes.
Let stand at room temp for 15 minutes before refrigerating or topping with whip cream or meringue.
